CATALO uses fine organic grapes farmed in Spain to produce the premium grade vinegar. Those that are ripe with rich sugar and aromatic ester contents are chosen and processed using wine manufacturing methods passed down through generations. Different blends of white wine, red wine and grapes, such as Pedro Ximenez and Malbec, are used. It is first carefully heated before blending with wine vinegar. It is then sealed in French oak barrels for a period of 5 years, thus creating vinegars of utmost quality in tone, texture and taste. With its alluring sweetness and fragrance, toasted aroma, silky texture, and sweet and sour taste, it is an excellent addition to any type of cooking.
