Health Info  Nutrient Glossary  Soy Lecithin

Soy lecithin is a fatty substance that is extracted from soybean oil. It contains a few different kinds of compounds, including three types of phospholipids, which are phosphatidylcholine, phosphatidylethanolamine and phosphotidylinositol.

Although soy lecithin is generally used as an emulsifier in various food applications, it is also consumed as a dietary supplement. As soy lecithin has emulsifying properties, it may assist in stabilizing cholesterol and promotes cardiovascular health. Soy lecithin is high in choline, which is one of the main components of cell membranes. It is believed that lecithin may improve memory and cognitive functions.
